Such exciting lives we lead…..

LOCATION:  In our tiny house in Retama Village, in Mission, Texas
WEATHER:  Very humid.  High 90. Light rain much of the day

I’ve mentioned before that we have a milkweed plant that the Monarch butterfly caterpillars love.  They have totally decimated one bush and have now moved on to another.  George counted 6 on the new bush yesterday.  We seem to spend an inordinate amount of time gazing at these little guys. 

Our neighbor excitedly came to the door to report a butterfly “being born” on the side of their RV.  We watched it come out of its chrysalis.  I just don’t know if we can stand this excitement!  Watch the blood pressure!

The caterpillars must march over to their yard after filling their tummies in our bushes.  What a nice neighborly arrangement! 

This was just the beginning of the excitement today in Retama Village.  First was the reaction to a post on our Retama Village Facebook group post announcing that Wine Wednesday was canceled for the week.  Everyone cracked up and reminded the organizer that it was Tuesday!

Then, another reminder on that group Facebook site – Don’t put your facemasks in the microwave!  The sewing ladies here have distributed more than 200 of the masks.  Apparently two couples yesterday tried to zap the germs by microwaving them, resulting in small fires.  Another excitement for the day!

Even though it was raining a bit, I did two water aerobics classes.  I keep thinking of my friends up North for whom this would be a wonderful weather in April.

Another excitement for the day was laundry. We have a small laundry next to our clubhouse that – so far – is still open.  I am about the only person who uses it as most people have a washer/dryer in their RV and/or house.  It has 2 washers and 2 dryers.  Today, I put the loads in to wash during the first water aerobics class (as the pool is next to the laundry room), then moved the load to the dryers during the second class.  I was so proud of this efficiency, as it clears my afternoon to do………what?

The afternoon was topped off by supervising George doing his grout cleaning project.  He moans a lot but other than that, he is a good worker. 

DINNER:  Something quite different.  A recipe from the British vegetable book I like.  It was called  “Asparagus and Prawn Pizzetta”.  I modified the recipe a bit, and it turned out really well.  I cheated a bit and used  pre-made thin pizza crusts.  I sauted (only about a minute) the prawns (shrimp) in garlic butter.  I also boiled (again only a minute) the asparagus spears, cut it bite-sized pieces.  Then – the assembly…..
I covered the pizza crusts with chunks of mozzarella,  topped with parmesan, and baked for about 5 minutes.  Then, I put the shrimp, asparagus, and green onion on the top and baked another minute or so.  When it came out of the oven, I topped it with basil – fresh from my flower pot  – spinach leaves, salt, pepper, and a small drizzle of olive oil.  Yummy!  Tastes like spring!
